  • One tsp of tamarind pulp or dry mango powder

 

4.Step by step preparation of Indian Bitter Gourd (Karela) – Pure Curry

  • First we should prepare the bitter gourd. wash it with clean water, and slice the karela into thin pieces.
  • To reduce the bitterness in the bitter gourd, apply salt on the sliced pieces, mix them thoroughly and keep it aside for 20 to 30 minutes.
  • Take a hot pan and add one tablespoon of mustard oil or sunflower oil.
  • Add karela and fry the slices until golden color appears. Set these fried slices aside.
  • Now make the curry base. Add some more oil in the same pan and heat it.
  • Add cumin seed, onions and fry them until it become golden brown color.
  • Next add ginger garlic paste, green chilies, tomatoes.
  • Cook them until the tomatoes get softened.
  • Its time to add the spices the turmeric powder, chili powder, coriander powder, salt and fried karela slices. Fry them all.
  • Pour the tamarind pulp or dry mango powder. Mix them all until everything blends perfectly.
  • Let it cook for few minutes. Indian Bitter Gourd (Karela) recipe got ready with satisfying flavors.
