There are two main versions of cachupa

2.1 Cachupa Rica which is meat version often made with pork meat, chicken or sometime beef.

2.2 cachupa pobre is vegetarian version made with mix of vegetables like sweet potatoes, cassava, cabbage .

4.Ingredients needed for cape verdean food recipe cachupa

The below ingredients are for meat version of cachupa. In case if you want to have vegetarian version then skip the meat and add veggies of your choice.

  • Two cups of corn (it should be pre soaked overnight)
  • One cup of dry kidney beans
  • One lb of pork belly
  • Half lb of sausage
  • Half lb of chicken pieces
  • Two chopped onions
  • Three minced garlic cloves
  • Two sliced tomatoes
  • Two tbsp of olive oil
  • One cup of chopped cabbage
  • One cubed sweet potatoe
  • One sliced carrot
  • One bay leaf
  • Salt and pepper according to taste

 

5.Step by step preparation process

  • The first step is to soak the beans and corn full night to reduce the cooking time.
  • Take a large pot and add olive oil in it.
  • Now add the meats and fry until it becomes golden brown colour.
  • Add onions, tomatoes and garlic and fry until it spread the aromas.
  • After that add the soaked corn, beans along with enough water so that everything gets covered.
  • Boil it until two to three hours by stirring the mixture occasionally.
  • Meanwhile you should test the tenderness of the meat.
  • Add all the vegetables in the final hour of cooking.
  • Adjust the seasonings and serve the cachupa hot

 

6.How you can enjoy cachupa

  • Cachupa can be best enjoyed with rice or bread.
  • Leftovers can be used as a new dish cachupa refogada by frying the stew in pan until crispy. It can also be topped with fried eggs for interesting flavor.
  • Pairing cachupa with local grogue (cape Verdean rum) makes it a true island meal.
